Thank you! I'll start there.

I don't have a particular goal in mind at this point, I really just want to understand how the code works. I love Daggerfall and have always been interested in getting into game development casually but never did. This looks like it can be a great place to start. I'm sure it will be tougher to get my arms wrapped around Unity than C# and so I really appreciate the tutorials you reference.
