I was thinking that it might be nice to have a "classic mode" checkbox that would override everything else. The idea being that you would not have to go through and uncheck all the other settings they would simply be ghosted out. When you uncheck "classic mode" all the previous setting come back.

I could see this being bundled into a larger addition that includes presets. There could be a classic preset, as you suggest, which changes the settings to be as close to classic as possible, another preset that has everything checked (for the sort of "remastered" experience DFU gives), and, of course, a custom option for users. Perhaps even with the ability to allow users to save their settings as a new preset for easy setting switching.
