Blue 'water' textures where it shouldn't be.
I have a small problem where about 25% of the ground is always a blue water texture, is there a way I can fix this?

We mainly hear of the "water texture" problem with older integrated GPUs like yours (your CPU is from Sandy Bridge generation, released January 2011). The minimum requirement for Daggerfall Unity is a GTX 660 or equivalent, which is also very old as a 2012 card.
I believe some of the newer integrated CPUs (e.g. Coffee Lake) seem to do OK compatibility wise, but a discrete nVidia/AMD GPU is still desirable for performance reasons.
It's possible someone might contribute a new terrain shader targeting this older hardware someday, although it's getting less likely each year as most of this hardware is close to a decade old and ageing out of life.
