Found an issue on the "Wicksly Burial Ground" small graveyard site where the hedge model clips into itself in 4 places. I dunno if that exterior is used anywhere else but assume it is given how Daggerfall works?
Anyway it looks like this:

This is called z-fighting. It's caused by some overlapping hedge geometry in places. You'll see the same thing at the same position in classic. It's just not as obvious at lower resolutions.
DFU reads all geometry and block layouts directly from classic gamedata, so we also inherit small problems like this. At least in DFU the block layout can be patched up and repaired by anyone willing to make custom RMB layouts.

Sounds like something that could be fixed by the UBLMF mod. I don't know if z-fighting issues have been considered, but that's worth a discussion there.
It happens on many hedges, but not only (I do remember some z-fighting on a specific interior wall of a mages guild model, for example).

This is indeed a fix that I would add to my mod. I have already fixed z-fighting in 2 or 3 other graveyards.
