I actually wrote something of a guide for this on another site. It contains information on settings, two mod lists (one without graphical changes and one with graphical changes) that both work well together and some advice on character building and dungeoneering for new players. A little late to the party, but a few more tips:

-If you're planning on using magic AT ALL, make sure to pick the increased magery advantage, Oherwise you might end up not having enough spell points to cast even your starter spells-
-If you're using vanilla fast travel, picking "cautious" in the travel options menu will completely regenerate your health, stamina and magic points during your travel (as opposed to "reckless" which will leave you with the same health, stamina and magic points you had when you started the fast travel). You can exploit this to instantly regenerate everything by fast travelling to the same site you're currently at, which will have a travel time of 0 and a cost of 0 but will still completely regenerate you if you pick the cautious option.
-If you don't feel like dungeon crawling, you can always do thieves guild quests, as none of their quests involve dungeon crawling.
-If you just found your quest objective in a dungeon but you can't remember how to get back to the entrance now (and you forgot to set up an anchor), the simplest way to find your way is to follow either the right hand rule or the left hand rule, which will almost always invevitably take you back to the entrance.
-When asking for directions for a building in town, if someone gives you instructions like "go northwest", you can just keep asking them over and over again and they will eventually mark it on you map (when i first started playing i used to think you needed to keep asking different people until one of them decided to mark it on your map)

A basic one but you will probably want to go into options and adjusts the key bonds to be more modern also you may want to check look with mouse. Other than that save a lot and switch between save slots incase one gets corrupted. As far as gameplay goes don’t stress too much if you fail a “quest” I like to start farming fighters and mages guild quests as soon as I get to town. I wouldn’t grab two at the same time as they have time limits. They also have stat requirements to progress UESP is your friend heck that goes for all elder scrolls games really.
